Rendang Raya Cuisineur

Malay translation version
2 kg daging, dipotong kiub besar
10 sudu besar cili kisar
2 kg santan pekat
8 sudu besar kerisik 
7  helai daun kunyit, dihiris nipis
2 sudu besar gula melaka, diparut
Garam, asam jawa dan  gula

 

Bahan A
15 ulas bawang merah
2 bawang merah besar
8 ulas bawang putih
5 inci halia

 

Bahan B 
4 inci lengkuas muda
14 batang serai - hiris

 

Bahan C (ditumbuk halus/ dikisar kering)
4 sudu besar ketumbar (rata), disangai
2 sudu besar jintan manis, disangai
2 sudu besar jintan putih, disangai

 

Cara-Cara

  1. Kisarkan bahan A dan bahan B secara berasingan. (untuk elakkan penggunaan air yang terlalu banyak, setelah bahan A dikisarkan, tapiskan dan gunakan air sama untuk mengisar bahan B).
  2. Dalam Kuali 32 cm Cuisineur, tumiskan Bahan A dalam minyak secukupnya sehingga bau naik. Masukkan cili kisar dan tumis sehingga pecah minyak.
  3. Masukkan Bahan B dan C dan tumis sehingga bau naik. Taburkan gula melaka dan gaul mesra.
  4. Masukkan daging dan santan, gaul dan biarkan reneh sehingga daging empuk. Tambahkan air sekiranya terlalu kering.
  5. Masukkan kerisik, garam, asam jawa dan gula secukup rasa. Taburkan daun kunyit dan gaul mesra.

 

English translation version 

2 kg beef (chuck), cut into large cubes 
10 tbsp of chili paste
2 kg thick coconut milk
8 tbsp toasted coconut paste (kerisik)
7  turmeric leaves, thinly sliced
2 tbsp gula melaka, shaved
Salt, tamarind paste and sugar

 

Ingredients A
15 shallots
2 big red onions
8 cloves garlic
5 inches ginger

 

Ingredients B
4 inches galangal
14 lemongrass, smashed

 

Ingredients C (blended)
4 tbsp coriander seeds, toasted
2 tbsp fennel seeds, toasted
2 tbsp cumin, toasted
 
Method
  1. Blend ingredients B and A separately. Add some water to ensure that a smooth paste is obtained. Once Ingredients B has been blended, sieve the mixture and use the excess water to blend ingredients A. This avoids using too much water in the blending process.
  2. In the Cuisineur 32cm Wok, saute ingredients A with enough oil till fragrant. Add in the chilli paste and fry till the chilli is cooked through (pecah minyak). 
  3. Add in ingredients B and C and saute till fragrant. Springkle gula melaka and salt.
  4. Add in beef, coconut milk and simmer till the beef is tender. Add in some water if the mixture gets too dry.
  5. Stir in toasted coconut paste, tamarind and sugar to taste.  Cook through
  6. Sprinkle turmeric leaves and mix well.
